Study title: The effect of chitin and ascorbic acid on dietary iron absorption from Tenebrio molitor larvae in young women.

We are currently recruiting healthy non-pregnant, non-lactating female participants, who are between 18-45 years old, whose body weight is up to 70 kg with a normal BMI between 18.5-24.9 kg/m2, and who have an open-minded attitude towards consuming insect-based meals, for a nutrition study. We would hereby like to invite you to participate in this study.
The overall aim of this study is to measure the absorption of iron from Tenebrio molitor larvae, a commercially available edible insect in Switzerland, and thus assess its nutritional value as a source of iron to better characterize the nutritional potential of this food. The study will be carried out in May and June 2025 at the study site of the Laboratory of Nutrition and Metabolic Epigenetics, GLC Building ETH Zurich (Gloriastrasse 37/39,D 35.2). The details of the study are as described below. Please read these details carefully to decide if you are able and willing to participate.
Participation in this study will involve nine appointments: 1 screening visit of 20 minutes and 8 study visits of approximately 20 minutes each. Enrolled participants will be invited to fixed study appointments between 7:30 am and 9:30 am. In total, the study will involve the consumption of 7 meals as breakfast (3 with pulverized insects, 4 without insects) over the period of 47 days. There will be 3 blood withdrawals of 6 mL (4 with the screening visit) collected from you by an experienced nurse. Your time involvement will be compensated with 170 CHF for completing all appointments.
